The majority of students use this course as a progression onto a level three programme in professional cookery and food and beverage service skills or into an apprenticeship.

What you will learn

A central element of the course is the work related experience. All learners run the service at Cegin Sir Gâr, the onsite training restaurant. Here you will gain a realistic view of the demands of working in the catering industry in a safe and supportive environment.

You will be taught culinary and food and beverage service skills by experienced staff through lively demonstrations and practical skills sessions. The hands-on experience in the training restaurant provides ample opportunity to put these skills into practice.

You will study a variety of units but the core units focus on effective teamwork and food safety and hygiene. Other units cover topics such as preparing meat, fish, poultry and vegetable dishes, making stocks soups and sauces, bread making and baking cakes, sponges and pastries and desserts, cocktail making, preparing hot beverages, wine service, Gueridon table work, silver service and serving customers. 

Assignments will include investigations into the scope and importance of the catering and hospitality industry to the UK economy, health and safety within the industry, menu planning and food costings. Unit knowledge will be assessed through test papers and practical observations for preparation, presentation and table service of food and beverages.

Literacy and numeracy are important for all students. Students who do not have a C grade or above in maths, English or Welsh (first language) will have additional teaching and support to study either GCSE or Essential Skills depending on GCSE grades. 

You will have plenty of support in developing your team working skills and customer service with a realistic working environment and your experiences on the course will help you understand the hospitality industry and your potential pathways within it. Successful completion of the course will enable you to progress to higher-level courses such as the Level 3 Diploma in Professional Cookery and Food and Beverage skills programme, an apprenticeship or industry related employment. 

Units are assessed by observation of practical tasks and knowledge based questioning which may be written or on media platforms. 

This qualification is available to be assessed through the medium of Welsh and English.

You will need to have successfully completed a level one qualification in professional cookery and food and beverage service skills. Learners with prior relevant industry experience will also be considered.

All learners are required to pay an administration fee of £25 prior to enrolment. 

You will need to provide your own stationery and may also incur costs if the department arranges educational visits.
